I like to freezer cook for the RV. (And honestly, I need to do more of it just in general.) I missed my planned grocery window this week, so we got them a day later than planned. Plus, he ran out to the RV storage lot to do a few things there, so today was a much bigger cooking day than usual.
We have a nice RV kitchen with all the usual/standard kitchen appliances. However, having these meals prepped and frozen makes them far easier to transport/store/prepare than all their ingredients would be.
* When relevant, all cultural cuisines are “inspired” and not authentic. These are freezer meals. While we like them, they are designed to prep, cook (some ingredients), assemble, freeze, thaw, and then cook. Once in the rig, most are made in one big skillet, which also makes dishes easier. Most also make a batch big enough for leftovers. Our next trip is 40 days long, so this was a huge cooking day.
Here are the things I made today:
- ~30 breakfast burritos with egg, bacon, sausage, potato, and cheese on flour tortillas
- ~ 8 servings of breakfast casserole of egg, bacon, sausage, potato, and cheese, but with a little kick
- steak burritos for one of our quick overnights (We do much easier meals on the driving days and especially on those single nights between two driving days.)
- Salisbury meatballs
- marinated Korean beef – x2 – my FAVE!
- Sicilian meatloaf
- Chicken cordon bleu bake – a “casserole”
- Meatball stroganoff – one of his faves!
- [ fun fact, I cracked at least 33 eggs ]
Plus, when we got home from Costco earlier this week, we (had the stuff we needed) and made:
- Firecracker lime chicken – his very FAVE!
- German pork chops
- Chicken curry x2
We also have some frozen meals left over from our last trip (because the area restaurants are lots better than we expected):
- Skillet ham with cheese and mustard sauce – another quick one for travel days
- Crunchy biscuit chicken
- Lemon chicken smash
- Tikka masala
- Chicken piccata
- Teriyaki chicken
- Mexican chicken
On the fly, we’ll also make a Dutch Baby (or three!) for mornings when we want something sweeter. We might also make a dessert or two here or there. And, we’ll eat out, of course.
I also did two loads of dishes and produced a third. I was almost done when he got home and had some of the breakfast casserole for dinner.
Then, I geared up and headed down to the hot tub….about 10 minutes before thunder, wind, and some sprinkles. Argh!
